Gobo (Burdock root): 1
Soy sauce: 2 tablespoons
Sake (cooking liquor): 2 tablespoons
Salt: 1/4 teaspoon
Minced ginger: 1/2 teaspoon
Starch: 1 tablespoon
Flour: 1 tablespoon
How to cook
1: Scratch off Gobo’s peel, and cut to thin sticks.
2: Rest Gobo pieces in A for more than 30 minutes.
3: Drain Gobo and cover with mixed starch and flour. Deep fry it in oil 340F (170℃) for 3 to 4 minutes.
